Pork with Shredded Tofu
I started out just moulding the rice a little bit with some water. I didn't really have an idea of what I was going to do, so I ended up making the sort of rice blob you'd use if you wanted to make a nigiri with an entire lincolnshire sausage on top.
As I started to add the meat I realised it wasn't really going anywhere, so I added another rice blob. All of a sudden I had some sort of weird river canyon thing going on.
So I did what any plating master would do - that's right, it was time for a fancy seaweed arch.
It's not load-bearing and Sir Norman Foster probably wouldn't approve, but it's there for all to see and appreciate. Welcoming all-comers like the arch at Wembley Stadium.
... Forget what I said. It kind of looks like a rice burger. I should have just made a little rice burger.
Man, that would have been cool.
