DIY Chicken Larb

Due to my being a sucker for just about anything wrapped in a lettuce leaf, I've done quite a few lettuce wraps already. So I decided to experiment a little bit with this one.

The lettuce leaves in my lunch box were a little too flat to do anything 'architectural' with them.

However, to give them their due, EAT Club always provide a huge pile of fresh herbs for Vietnamese/Thai dishes, so I had a lot of corriander to play with.

I mean.. I'm not really sure I did anything great here, and my little pile of crunchy veggies could have been neater, but it's not my ugliest effort so far!
