Bo Ssam Part 3

I think Bo Ssam is beginning to become a bit of a vertical flight for my plating skills.

I'm a sucker for stuff in lettuce wraps as they remind me of some of my favourite dishes from my childhood (particularly pigeon in lettuce wraps in HK.)

Ok, goals for this one:

• Neat lettuce arrangement

• Some kind of saucing

So I think I kind of met those goals. Unfortunately I realised, quite quickly, that my wife was going to have a field day with my saucing. What I had intended as a sun-burst motif was, let us say, quite conceptual.

I added a sweepipng curve through the elements to mitigate the worst of it, but she still pointed it out immediately when I showed her the photo.
